Puppy Breath

About five weeks ago now, more puppy mill pups came to Phoenix.  There were ten alloted to us, but Valley of the Sun Giant Schnauzer Rescue only took two and the other eight went to Arizona mini schnauzer rescue.  They were so matted and filthy that it was hard to tell just what color they were when we first got them.  We took two black and silver males that we very dark compared to the pepper salt minis we had this last summer.  The boys came home with us and got the big crate in the kitchen. 

They were just the cutest little guys and we got our fill of puppy breath which everyone should have every once in awhile.   

It is fun watching them trying to drink out of the big dogs' water bowl.   

Hard to believe they are so little but the other pups tried the same thing.   

The purple collar is T-Bone that we kept and he is all grown up now.

He loves to sleep with his "Queenie".  The two black minis have gone to their new homes which is as it should be, but it is hard to let them go.

Southwestern Soup

There has been a lot going on in our lives the last few weeks.  I will post pictures of the puppies we fostered for a few short weeks.  That really kept us busy!  Here is some soup that we gorged on this week.  It is so yummy!  Enjoy!

Southwestern Soup

Yield

Makes 6 servings--lots more when I was through with it.  I filled a large Dutch oven with beans and veggies.

Ingredients

• 1  pound  ground beef
• 1  cup  coarsely chopped onion
• 2  garlic cloves, mincedI added 2 heaping tbl of chopped garlic
• 2  (16-oz.) cans light red kidney beans, rinsed and drained
• 1  (15-oz.) can black beans, rinsed and drained
• 1  (14.5-oz.) can petite diced tomatoes and jalapenos, undrained I didn't have any with jalapenos so just used plain
• 1  (14.5-oz.) can diced tomatoes and mild green chiles, undrained I just used two small cans of chopped mild green chiles and another plain can of chopped tomatoes
• 1  (14-oz.) can beef broth I used chicken broth cuz that is what I had
• 2  cups  frozen yellow and white whole kernel corn Think I used more and it was good
• 1  (1-oz.) envelope taco seasoning mix Did not have so didn't use but I don't like the packaged mixes anyway
• 1/4  teaspoon  salt
• 1/4  teaspoon  pepper
• 2  tablespoons  chopped fresh cilantro didn't have so used fresh seasonings that I did have but I love cilantro
• Toppings: sour cream and chopped fresh cilantro
• I added frozen long green beans to it because I wanted some green color in it.

Preparation I used a large cast iron Dutch oven and one time ate it with brown rice.

1. Brown ground beef, onion, and garlic in a large Dutch oven over medium-high heat, stirring often, 10 to 12 minutes or until meat crumbles and is no longer pink and onion is softened; drain.

2. Stir in kidney beans, next 8 ingredients, and 4 cups water. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer 30 minutes or until thoroughly heated. Stir in cilantro just before serving. Serve with desired toppings.

I got the above recipe out of the magazine and made it this week.  My changes are in blue.  It is wonderful and the type of soup you can just keep adding things to it as it gets low.  Tom and I have eaten it till we were ill this last week.
